Bulk Beef - Quarter Beef - $4.50/lb (Includes Cut, Grind, Wrap Services)

A quarter of beef is a great way to get acquainted with bulk beef purchase.  Quite suitable for families or individuals who are light beef eaters; the butchering process begins very soon so now is a great time to reserve your quarter of beef.  Purchasing a quarter of beef comes from a side of beef divided into two equal parts therefore you will receive a standard mix of steaks, roasts and ground beef.  Steaks will come two per pack, cut 1″ thick, roasts will come in two pound sizes and ground beef will be one pound bags.

On average a quarter of beef that has a 225lb hot hanging weight will yield, after shrink and deboning, approximately 140 lbs of beef.

Beef is priced based on hot hanging weight.  Cut, grind and wrap (butcher fees) are included in the price per pound (lbs) of the overall cost to purchase.

We price our beef by the term “hot hanging weight”.  This is the most accurate way to price bulk beef.

When you decide to purchase a beef from Supreme if it be whole, side or quarter you are purchasing beef from one particular animal.  You are not getting pieces from several different animals.  One of the major benefits of this is true traceability of the meat.  Our whole beef carcasses range from 850-1000 lbs hot hanging weight but the amount of beef you put in your freezer will be less due to shrink.  Shrinkage on a hanging carcass is approximately 40%; shrinkage which is a combination of moisture loss during the aging process, trimming that occurs and the deboning during the cut, grind and wrap process.  Overall, your beef yield will be around 60% of the hot hanging weight.

You also have the choice to request we save the heart, liver, kidneys and soup bones.  These are very nutritious components of the animal and is not accounted for in the hot hanging carcass weight.
